rose mary's orange glazed candied sweet potatoes
This is another Southern Favorite, that my mom always made when I was growing up. I added a little twist with the Orange Juice and Orange Zest, and liked it so much I have been using it since 1979.

Ingredients
- 6 medium sweet potatoes
- 1/2 stick butter or margarine
- 1/2 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/4 cup light brown sugar
- 1 teaspoon orange extract
- 1/2 cup light corn syrup
- 2 tablespoons orange juice
- - grated orange zest from medium orange
How To Make rose mary's orange glazed candied sweet potatoes

Step 1Cook sweet potatoes in boiling water for 15 minutes. Cool. Peel potatoes and cut in half lengthwise.

Step 2Add remaining ingredients to fry pan. Arrange potatoes on top, cut side down.Cook slowly on medium low heat,UNCOVERED basting frequently to prevent sticking, for about an hour or until potatoes are tender and well glazed.

Step 3NOTE: The main thing is to be patient, and keep basting throughout the entire cooking time while keeping the flame low until the liquid begins to carmelize. I have been using this recipe since 1979, and has been a family favorite ever since.

Step 4I also usually add additional orange zest to the potatoes, just before I am ready to serve them.
