Ingredients

  • 1 pound carrots
  • 1 pound parsnips
  • 1 pound turnips
  • 1 tablespoon oil
  • 2 tablespoons honey

How To Make roasted root vegetables

  • Step 1
    Preheat oven to 400F, (200C or Gas Mark 6) Peel and cut the vegetables into 1/2 inch cubes. **sometimes I will use beets and sweet potatoes too.
  • Step 2
    Heat oil in a pan and quickly fry the vegetables until just coloured.
  • Step 3
    Transfer to a roasting dish, drizzle over the honey, toss to coat evenly. Roast in the preheated oven for about 1 hour, or until tender and well glazed. Toss frequently during the cooking to prevent the honey from burning.
