I love mushrooms!

Blue Ribbon Recipe

Perfect for a cocktail party, brunch, luncheon or even alongside a steak at dinner. This is a very economical side dish. These mushrooms are juicy with a crunchy top. Garlic butter and bread crumbs add to the flavor. Definitely have a fork ready when you dig in!

Ingredients

  • 16 - even-sized open cap mushrooms, stems cut level
  • 3 tablespoons vegetable oil or corn oil
  • 1 1/2 sticks unsalted butter, softened
  • 3 cloves garlic, chopped very fine
  • 2 tablespoons fresh thyme, chopped
  • 1 1/2 tablespoons lemon juice
  • - salt and pepper, to taste
  • 1/2 cup bread crumbs

How To Make roasted garlic mushrooms

  • Cutting down the stems of the mushrooms.
    Step 1
    Preheat oven to 400 degrees. Cut stems level to the mushroom cap.
  • Frying the mushrooms.
    Step 2
    Lightly fry the mushrooms, cap-side down, in hot oil for 20 seconds.
  • Mushrooms arranged in a baking dish.
    Step 3
    Arrange the mushrooms in a shallow roasting pan with stems facing upwards.
  • Softened butter, garlic, thyme, lemon juice, and seasoning in a bowl.
    Step 4
    Mix together the butter, garlic, thyme, lemon juice, and seasoning.
  • Garlic butter spooned over the mushrooms.
    Step 5
    Spoon a little garlic butter on to each mushroom.
  • Pressing on the bread crumbs.
    Step 6
    Then lightly press the bread crumbs on top.
  • Baking the mushrooms.
    Step 7
    Cook immediately in the oven for 10 minutes. Serve and enjoy.
