roasted garlic mashed cauliflower
This is my Low Carb version of my Roasted Garlic Mashed Potatoes. The cauliflower is a terrific substitute! A must try. Cooking with Passion, sw:)

Ingredients
- 1 large head cauliflower
- 1/2 stick butter, unsalted
- 1/4 cup olive oil, extra virgin
- 1/4 cup heavy whipping cream
- 2 tablespoons italian parsley, chopped
- 1 large head of garlic, roasted**cut the top of the garlic off, add some evoo, put in aluminum foil and bake for 30 minutes or so..until soft, squeeze garlic out.**
- 1 tablespoon greek seasoning or favorite seasoning salt
- 1 teaspoon black pepper, course
How To Make roasted garlic mashed cauliflower

Step 1pick out a large firm head of cauliflower

Step 2break cauliflower head into florets

Step 3boil cauliflower florets in a large pot of salted water for 15 minutes or until fork tender. drain in a colander

Step 4in a large mixing bowl combine cauliflower and other ingredients. with an immresion blender or hand mixer whip cauliflower until creamy. you may also put cauliflower in a blender to puree

Step 5bowl up and serve!
