I *love* roasted vegetables. I make this all the time when I want something easy but fresh and healthy. To make it even more healthy, use Pam's Olive Oil spray and lightly mist the cauliflower rather than tossing in regular olive oil.

Ingredients
- 1 - cauliflower head
- 2 tablespoons olive oil
- - salt and pepper to taste
- 1/2 cup greek yogurt, plain
How To Make roasted cauliflower

Step 1Preheat oven to 425°. Wash cauliflower and cut into small florets (approx. 1 to 1 1/2 inches). Place cauliflower florets in a bowl with olive oil; stir to coat cauliflower.

Step 2Spread cauliflower on a metal pan and cook for 15-20 minutes, until slightly browned. Stir once or twice during cook time.

Step 3Remove cauliflower from oven. Place in a bowl and stir in Greek yogurt until all florets are coated. Top with additional pepper, if desired.
