I *love* roasted vegetables. I make this all the time when I want something easy but fresh and healthy. To make it even more healthy, use Pam's Olive Oil spray and lightly mist the cauliflower rather than tossing in regular olive oil.

Ingredients

  • 1 - cauliflower head
  • 2 tablespoons olive oil
  • - salt and pepper to taste
  • 1/2 cup greek yogurt, plain

How To Make roasted cauliflower

  • Step 1
    Preheat oven to 425°. Wash cauliflower and cut into small florets (approx. 1 to 1 1/2 inches). Place cauliflower florets in a bowl with olive oil; stir to coat cauliflower.
  • Step 2
    Spread cauliflower on a metal pan and cook for 15-20 minutes, until slightly browned. Stir once or twice during cook time.
  • Step 3
    Remove cauliflower from oven. Place in a bowl and stir in Greek yogurt until all florets are coated. Top with additional pepper, if desired.
