Tiffany shares a bunch of options on how to use this roasted butternut squash, but we opted to roast it and cut it into cubes. We dipped it into the sweet, sugary sauce for a delicious side dish. The flavor is a mix of yellow squash and sweet potato. Yum!

- 1 - butternut squash, halved
- 1/2 cup dark brown sugar
- 1 pinch sea salt
- 2-3 tablespoons canola/vegetable oil to roast
- 1 cup water for the pan

Depending on the size of your butternut squash, roasting time will vary. Ours took 35 minutes.

Step 1Slice in half and remove seeds. Take your squash and rub it down with oil.

Step 2Place in a pan. Then sprinkle brown sugar over it. I pool a little extra in the concave space. Then pour about a cup of water into the bottom of the pan.

Step 3Cook at 450F until fork tender.
