Ingredients

  • 8 c
    peeled and cubed butternut squash (about 1 large squash or 2 small ones)
  • 2 Tbsp
    olive oil
  • 2 tsp
    onion powder
  • 1 tsp
    dried parsley
  • 1/2 tsp
    dried basil
  • 1/2 tsp
    dried sage
  • 1/2 tsp
    paprika
  • 1 tsp
    salt

How to Make Roasted Butternut Squash

Step-by-Step

  1. Peel squash and remove seeds. Cut into 1 1/2” chunks and place in a large mixing bowl.
  2. Drizzle olive oil over squash. Mix until all pieces are coated evenly.
  3. Stir in seasonings, taking care to mix well.
  4. Distribute single layer onto baking sheets. Bake at 400° for 35 minutes or until pieces are tender and lightly browned on edges. Baking time will vary depending on the age and size of squash pieces.
