- 1 bunch fresh broccoli, cut into florets
- 2 - 3 tablespoons extra virgin olive oil
- - parmesean cheese
- - salt and pepper, to your taste
- - splash or two of lemon juice, if desired
How To Make roasted broccoli

Step 1Pre-heat oven to 450°. Line baking sheet with aluminum foil and spray with cooking spray. Boil water in medium saucepan, add some kosher salt to the water. While water is boiling, prepare broccoli by cutting into florets. Also prepare a mixing bowl with ice water. Drop broccoli into boiling water for no longer than 1 minute. Immediately strain broccoli and place into ice water to shock and stop the cooking. Drain broccoli onto paper towels or a kitchen towel. Place drained broccoli onto prepared cooking sheet and season with salt and pepper and drizzle olive oil over broccoli. Place in oven and roast for about 10-15 minutes until it is to your desired doneness. We like ours to be a little crunchy. When done, remove from oven, place in serving dish, sprinkle a little lemon juice over if desired and immediately sprinkle with Parmesean cheese.
