How to Make Roasted Beets & Carrots
- Heat the oven to 425F.
- Then wrap the beets individually in foil. Place in a shallow pan. Then toss the carrots with oil in large shallow baking dish. bake the beets for about 1 hour & 15 mins. Add in the carrots to the oven after 45 mins.
- Then unwrap the beets,remove the skins & stems. Cut each beet into 8 wedges. Then add in the carrots with the combine dressing & ginger. Toss to coat everything.
- Bake for another 15 mins or until vegetables are tender.
- Special Tip: You can make the beets can be roasted & peeled up to 3 days ahead.
