roasted beets & carrots
I try to add in as much veggies in every meal as I can. My uncle loves beets & carrots. So this is speed. Plus my brothers dont mind eatting most veggies that are cooked. So works out great for me...

Ingredients
- 4 - beets, trimmed
- 6 - carrots, peeled & cut diagonally into 3/4 inch thick slices
- 2 teaspoons olive oil
- 1/2 cup catalina dressing
- 2 teaspoons ground ginger
How To Make roasted beets & carrots

Step 1Heat the oven to 425F.

Step 2Then wrap the beets individually in foil. Place in a shallow pan. Then toss the carrots with oil in large shallow baking dish. bake the beets for about 1 hour & 15 mins. Add in the carrots to the oven after 45 mins.

Step 3Then unwrap the beets,remove the skins & stems. Cut each beet into 8 wedges. Then add in the carrots with the combine dressing & ginger. Toss to coat everything.

Step 4Bake for another 15 mins or until vegetables are tender.

Step 5Special Tip: You can make the beets can be roasted & peeled up to 3 days ahead.
