- 6 - plum tomatoes
- 4 ounces goat cheese
- 3 cloves garlic minced
- 1 bunch fresh basil
- 1/2 cup olive oil
- 1/2 cup very good quality balsamic vineger
- - sea salt
- - freshly cracked black pepper
How To Make roast tomatoes w/goat cheese & balsamic drizzle

Step 1HALF TOMATOES AND REMOVE SEEDS & PULP. ARRANGE ON BAKING SHEET. IN CAVITIES OF TOMATOES, SPRINKLE MINCED GARLIC. SPRINKLE WITH SEA SALT AND FRESHLY CRACKED BLACK PEPPER. DRIZZLE WITH OLIVE OIL. ROAST VERY LOW AT 250 UNTIL TOMATOES ARE DEEPLY GOLDEN.

Step 2WHILE TOMATOES ARE ROASTING, POUR BALSAMIC VINEGAR INTO A SAUCEPAN AND REDUCE IT TO A THICK SYRUP CONSISTENCY. IN A BLENDER OR PROCESSOR, BLEND THE BUNCH OF BASIL WITH THE OIL AND SET ASIDE.

Step 3ASSEMBLE PLATE BY ARRANGING TOMATOES TOP TOMATOES WITH GOAT CHEEESE DRIZZLE WITH BALSAMIC SYRUP AND THEN, DRIZZLE WITH BASIL OIL.
