My dad would make this to go along w/ a roast beef. Plus this is one way the kids would eat their veggies, lol. It's that good!

Ingredients
- 2 - 10 oz boxes frozen chopped broccoli
- 1 can fat-free cream of mushroom soup
- 1 cup shredded cheddar cheese, i used reduced-fat
- 1 tablespoon minced onion
- 2 - eggs, beaten
- 1 cup mayonnaise, i used light
- - salt and pepper to taste
- 1 cup crushed ritz crackers, i used reduced-fat
- 2-3 tablespoons melted butter
How To Make ritzy broccoli casserole

Step 1Heat oven to 350. Lightly spray casserole dish w/ cooking spray. In a microwaveable bowl, microwave broccoli w/ about 1/4 cup water, until tender, but still has some crunch to it. Drain well.

Step 2In bowl, mix together broccoli, soup, cheese, onion, eggs, mayo, salt and pepper. Mix well. Spoon into casserole dish.

Step 3Sprinkle top of casserole w/ cracker crumbs. Drizzle w/ butter. Bake 45 mins or until bubbly. Can tent w/ foil if top is cooking to fast, but take the foil off the last 10 mins.
