Ritzy broccoli casserole

Ingredients

210 oz boxes frozen chopped broccoli
-
1 can(s)fat-free cream of mushroom soup
-
1 cshredded cheddar cheese, i used reduced-fat
-
1 Tbspminced onion
-
2eggs, beaten
-
1 cmayonnaise, i used light
-
·salt and pepper to taste
-
1 ccrushed ritz crackers, i used reduced-fat
-
2-3 Tbspmelted butter
How to Make Ritzy broccoli casserole
- Heat oven to 350. Lightly spray casserole dish w/ cooking spray. In a microwaveable bowl, microwave broccoli w/ about 1/4 cup water, until tender, but still has some crunch to it. Drain well.
- In bowl, mix together broccoli, soup, cheese, onion, eggs, mayo, salt and pepper. Mix well. Spoon into casserole dish.
- Sprinkle top of casserole w/ cracker crumbs. Drizzle w/ butter. Bake 45 mins or until bubbly. Can tent w/ foil if top is cooking to fast, but take the foil off the last 10 mins.
