My dad would make this to go along w/ a roast beef. Plus this is one way the kids would eat their veggies, lol. It's that good!

Ingredients

  • 2 - 10 oz boxes frozen chopped broccoli
  • 1 can fat-free cream of mushroom soup
  • 1 cup shredded cheddar cheese, i used reduced-fat
  • 1 tablespoon minced onion
  • 2 - eggs, beaten
  • 1 cup mayonnaise, i used light
  • - salt and pepper to taste
  • 1 cup crushed ritz crackers, i used reduced-fat
  • 2-3 tablespoons melted butter

How To Make ritzy broccoli casserole

  • Step 1
    Heat oven to 350. Lightly spray casserole dish w/ cooking spray. In a microwaveable bowl, microwave broccoli w/ about 1/4 cup water, until tender, but still has some crunch to it. Drain well.
  • Step 2
    In bowl, mix together broccoli, soup, cheese, onion, eggs, mayo, salt and pepper. Mix well. Spoon into casserole dish.
  • Step 3
    Sprinkle top of casserole w/ cracker crumbs. Drizzle w/ butter. Bake 45 mins or until bubbly. Can tent w/ foil if top is cooking to fast, but take the foil off the last 10 mins.
