Ingredients
- 1 eggplant,cubed
- 1 large zucchini,cubed
- 2 med,yellow squash,cubed
- 1/4 cup olive oil
- 1 samll green,pepper coarsely chopped
- 1 samll red pepper chopped
- 1 med onion,chopped
- 2 garlic cloves,mincrd
- 2 (14 1/2-ounce)cans tomato wedges,undrained
- 1/3 cup samll pitted ripe olives
- 1 teaspoon salt
- 2 teaspoons dried italian seasoning
- 1 bay leaf
- 3/4 cup freshly grated parmesan cheese
How To Make " ratatouille"

Step 1saute first 3 ingredient in hot oil in a large Dutch oven over med-high heat 6 to 8 min.Add peppers,onion,garlic;saute 8 min,stirring occasionally.Add tomatoes and next 5 ingredients;

Step 2Cover,reduce heat to med,and simmer 15 min or until tender.Discard bay leaf.

Step 3Transfer ratatouille to a large serving dish.sprinkle with cheese.
