Ingredients

  • 1 - eggplant,cubed
  • 1 - large zucchini,cubed
  • 2 - med,yellow squash,cubed
  • 1/4 cup - olive oil
  • 1 - samll green,pepper coarsely chopped
  • 1 - samll red pepper chopped
  • 1 - med onion,chopped
  • 2 - garlic cloves,mincrd
  • 2 - (14 1/2-ounce)cans tomato wedges,undrained
  • 1/3 cup - samll pitted ripe olives
  • 1 - teaspoon salt
  • 2 - teaspoons dried italian seasoning
  • 1 - bay leaf
  • 3/4 cup - freshly grated parmesan cheese

How To Make " ratatouille"

  • Step 1
    saute first 3 ingredient in hot oil in a large Dutch oven over med-high heat 6 to 8 min.Add peppers,onion,garlic;saute 8 min,stirring occasionally.Add tomatoes and next 5 ingredients;
  • Step 2
    Cover,reduce heat to med,and simmer 15 min or until tender.Discard bay leaf.
  • Step 3
    Transfer ratatouille to a large serving dish.sprinkle with cheese.
