    med,yellow squash,cubed
  • 1/4 cup
    olive oil
  • 1
    samll green,pepper coarsely chopped
  • 1
    samll red pepper chopped
  • 1
    med onion,chopped
  • 2
    garlic cloves,mincrd
  • 2
    (14 1/2-ounce)cans tomato wedges,undrained
  • 1/3 cup
    samll pitted ripe olives
  • 1
    teaspoon salt
  • 2
    teaspoons dried italian seasoning
  • 1
    bay leaf
  • 3/4 cup
    freshly grated parmesan cheese

How to Make " RATATOUILLE"

Step-by-Step

  1. saute first 3 ingredient in hot oil in a large Dutch oven over med-high heat 6 to 8 min.Add peppers,onion,garlic;saute 8 min,stirring occasionally.Add tomatoes and next 5 ingredients;
  2. Cover,reduce heat to med,and simmer 15 min or until tender.Discard bay leaf.
  3. Transfer ratatouille to a large serving dish.sprinkle with cheese.
