Ingredients
- 1 1/2 cups cubed eggplant
- 1/2 cup coarsely chopped yellow squash or zucchini
- 1/2 cup coarsely chopped tomato or package small tomatoes (yellow or red)
- 28 ounces can marinara sauce
- 12 ounces jar trader joe's red pepper spread with eggplant & garlic (optional)
- 1/3 cup coarsely chopped sweet red peppers
- 1 - onion, chopped
- 4 cloves garlic, chopped
- 1 package mushrooms
- - salt and pepper to taste
How To Make ratatouille

Step 1Add all ingredients to slow cooker except mushrooms and mix together. Cook on high 2 1/2 hours or low 4 1/2 hours. After finished add mushrooms which will cook as ratatouille cools.
