Ingredients

  • 1 1/2 cups cubed eggplant
  • 1/2 cup coarsely chopped yellow squash or zucchini
  • 1/2 cup coarsely chopped tomato or package small tomatoes (yellow or red)
  • 28 ounces can marinara sauce
  • 12 ounces jar trader joe's red pepper spread with eggplant & garlic (optional)
  • 1/3 cup coarsely chopped sweet red peppers
  • 1 - onion, chopped
  • 4 cloves garlic, chopped
  • 1 package mushrooms
  • - salt and pepper to taste

How To Make ratatouille

  • Step 1
    Add all ingredients to slow cooker except mushrooms and mix together. Cook on high 2 1/2 hours or low 4 1/2 hours. After finished add mushrooms which will cook as ratatouille cools.

    Note: all measurements are approximate-add whatever you like in the amounts you like.
