Slow Cooker Crock Pot
Ingredients For ratatouille

1 1/2 ccubed eggplant
-
1/2 ccoarsely chopped yellow squash or zucchini
-
1/2 ccoarsely chopped tomato or package small tomatoes (yellow or red)

28 ozcan marinara sauce
-
12 ozjar trader joe's red pepper spread with eggplant & garlic (optional)
-
1/3 ccoarsely chopped sweet red peppers
-
1onion, chopped
-
4 clovegarlic, chopped
-
1 pkgmushrooms
-
salt and pepper to taste
How To Make ratatouille

1Add all ingredients to slow cooker except mushrooms and mix together. Cook on high 2 1/2 hours or low 4 1/2 hours. After finished add mushrooms which will cook as ratatouille cools.

2Note: all measurements are approximate-add whatever you like in the amounts you like.
