Ingredients

  • 1 pound mushrooms
  • 2 - zuchinni
  • 1 large eggplant
  • 2 - green peppers
  • 1 - red pepper
  • 2 - onions
  • 2 large cans stewed tomatoes w/ basil
  • 3-4 cloves garlic, mashed
  • 1 teaspoon basil, dried
  • 1/2 teaspoon marjoram, dried
  • 1/2 teaspoon thyme
  • 2 - bay leaves
  • 1-1 1/2 cups white wine, dry ( i use chenin blanc)

How To Make ratatouille, ( the real deal)

  • Step 1
    1.Rough chop your veggies, Peel Eggplant and chop into bite size pieces.
  • Step 2
    2. Saute your spices, garlic, onion,in 1/8 to 1/4 cup olive oil, start adding veggies in order given and saute 2 to 5 minutes between each addition. Add wine and tomatoes last. vegatables should be tender crisp.

    3. Enjoy this mixture of wonderful flavors. you'll love eating your veggies now. xoxo
