Ingredients
- 1 pound mushrooms
- 2 - zuchinni
- 1 large eggplant
- 2 - green peppers
- 1 - red pepper
- 2 - onions
- 2 large cans stewed tomatoes w/ basil
- 3-4 cloves garlic, mashed
- 1 teaspoon basil, dried
- 1/2 teaspoon marjoram, dried
- 1/2 teaspoon thyme
- 2 - bay leaves
- 1-1 1/2 cups white wine, dry ( i use chenin blanc)

Step 11.Rough chop your veggies, Peel Eggplant and chop into bite size pieces.

Step 22. Saute your spices, garlic, onion,in 1/8 to 1/4 cup olive oil, start adding veggies in order given and saute 2 to 5 minutes between each addition. Add wine and tomatoes last. vegatables should be tender crisp.
