Ingredients
- 1 tablespoon olive oil
- 1 - onions, yellow, medium
- 1 - diced red bell pepper
- 1 - eggplant
- 2 - zucchini
- 2 - garlic cloves, chopped
- 4 - diced tomatoes
- 2 teaspoons fresh oregano leaves
- - to taste salt/pepper
- 1/2 cup shredded parmesan, roman,asiago cheese
How To Make ratatouille

Step 1Over medium-high heat, preheat a large pan, add olive oil and onion, and saute until onion turns translucent ( about 3 minutes).

Step 2add the pepper, cook for another 2 minutes. Add zucchini and eggplant and cook an additional 2 minutes, stirring occasionally.

Step 3Add sthe chopped garlic, stisr, cook for 1 minute, then add the tomatoes and oregano. reduce heat to low, season with salt and pepper, cover and simmer until the vegetables are tender but not soft (10minutes). sprinkle 1/2 of shredded cheese. enjoy!!!!
