Quinoa is a very versatile grain...you can get creative with it....add red diced onions and black olives if you like.

    quinoa, cooked
  • 1 can(s)
    garbanzo beans, drained
  • 1 c
    grape tomatoes, halved
  • 1/2 c
    cucumber, seeded and diced
  • 1 bunch
    cilantro, chopped
  • 2
    limes, juiced
  • 1/4 c
    olive oil
  • ·
    salt/pepper

How to Make Quinoa Salad

Step-by-Step

  1. Cooked quinoa according to package, let cool
  2. toss with all ingredients and chill for a few hours.
  3. You can top with Feta cheese, if desired....ENJOY
