What a nice tastey lunch or side dish, different from the norm pasta salad. The flavors are amazing!!!

Ingredients

  • - garlic flavored olive oil
  • 1 cup quinoa, cooked
  • - bunch asparagus
  • 1 - red pepper julienned
  • 2 - ears corn
  • DRESSING
  • 1/4 cup canola oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon dijon mustard
  • 2 teaspoons lemon juice
  • - s&p

How To Make quinoa roasted veggie salad

  • Step 1
    Prepare quinoa according to directions, drain and set aside.
  • Step 2
    Mix veggies in bowl and drizzel with oil and season. Place on heated grill or grill pan and cook while turning for few min til tender crisp.
  • Step 3
    Chop grilled veggies and remove corn from cob. Toss with quinoa.
  • Step 4
    Make dressing and pour over salad. Refrigerate for 2 hours or overnight. Serve as side dish, or main dish with crusty bread or wheat crackers.
