What a nice tastey lunch or side dish, different from the norm pasta salad. The flavors are amazing!!!

garlic flavored olive oil
1 c
quinoa, cooked
bunch asparagus
red pepper julienned
ears corn


1/4 c
canola oil
1/4 c
red wine vinegar
1 tsp
dijon mustard
2 tsp
lemon juice

How to Make Quinoa Roasted Veggie Salad


  • 1Prepare quinoa according to directions, drain and set aside.
  • 2Mix veggies in bowl and drizzel with oil and season.
    Place on heated grill or grill pan and cook while turning for few min til tender crisp.
  • 3Chop grilled veggies and remove corn from cob.
    Toss with quinoa.
  • 4Make dressing and pour over salad. Refrigerate for 2 hours or overnight.
    Serve as side dish, or main dish with crusty bread or wheat crackers.
