Ingredients
- - garlic flavored olive oil
- 1 cup quinoa, cooked
- - bunch asparagus
- 1 - red pepper julienned
- 2 - ears corn
- DRESSING
- 1/4 cup canola oil
- 1/4 cup red wine vinegar
- 1 teaspoon dijon mustard
- 2 teaspoons lemon juice
- - s&p
How To Make quinoa roasted veggie salad

Step 1Prepare quinoa according to directions, drain and set aside.

Step 2Mix veggies in bowl and drizzel with oil and season. Place on heated grill or grill pan and cook while turning for few min til tender crisp.

Step 3Chop grilled veggies and remove corn from cob. Toss with quinoa.

Step 4Make dressing and pour over salad. Refrigerate for 2 hours or overnight. Serve as side dish, or main dish with crusty bread or wheat crackers.
