Mama called these "bread & butter pickles". I call em Quick Pickles cuz they never last long & are quick to make.

Ingredients

1 1/4 lb
cucumbers,peeled(or not) & cut into 1/4in. slices
1/2 tsp
salt
1 c
each cider & white vinegar
1 c
brown sugar, light
1 1/2 c
slivered onions
2
garlic cloves,slivered
1 tsp
dill seed
1 tsp
mustard seed

How to Make Quick Pickles

Step-by-Step

  • 1Place cucumber slices in a colander set in the sink.Sprinkle with salt and stir to make sure all slices are covered.Let stand 20 min.
  • 2Meanwhile,combine the rest of ingredients in a saucepan.Bring to a boil,reduce heat and simmer for 10 min.
  • 3Rinse,drain and transfer cucumbers to a heatproof bowl.Pour hot liquid over the cucumbers;stir to combine.Put in fridge at least 10 min. to bring to room temp. before trying to eat.
  • 4May be covered and refrigerated for up to 10 days.If they last that long.
