1 1/4 lbcucumbers,peeled(or not) & cut into 1/4in. slices
1 ceach cider & white vinegar
1 cbrown sugar, light
1 1/2 cslivered onions
1 tspdill seed
1 tspmustard seed
How to Make Quick Pickles
- Place cucumber slices in a colander set in the sink.Sprinkle with salt and stir to make sure all slices are covered.Let stand 20 min.
- Meanwhile,combine the rest of ingredients in a saucepan.Bring to a boil,reduce heat and simmer for 10 min.
- Rinse,drain and transfer cucumbers to a heatproof bowl.Pour hot liquid over the cucumbers;stir to combine.Put in fridge at least 10 min. to bring to room temp. before trying to eat.
- May be covered and refrigerated for up to 10 days.If they last that long.
