Ingredients
- 1 - bunch fresh cut broccoli
- 1 - onion, chopped
- 6 ounces low-fat cottage cheese.
- 4 - eggs, beaten, or egg beaters equivalent.
- 1/2 cup " i can't believe it's not butter."
- 1 - pkg, jiffy cornbread mix
- 1/2 cup reduced-fat, shredded mozzarella cheese.
- 1/2 cup fresh sliced mushrooms.

Step 1Heat oven to 400. Lightly spray a 9" square baking pan w/ cooking spray. In lg bowl, beat all ingredients w/ mixer. Pour ingredients into pan. Bake 30 min, or until toothpick inserted in center comes out clean.
