I've been trying to eat healthier protein meals lately so when I found this recipe I thought it would be great to try it with agave nectar or honey in place of the sugar. You can even substitute the thick sour cream with greek yogurt. You may even choose to spice up the dressing by adding any type of mustard. Keep in mind this recipe is for one. You can always multiply the ingedients as needed. Enjoy!

Ingredients
- 1/4 - head of lettuce, romaine or iceberg
- 2 - hard boiled eggs
- 1 cup thick sour cream or greek yogurt
- 1 teaspoon sugar or a healthier choice like agave nectar or honey
- 1 teaspoon lemon juice
- - ground pepper
- - salt
How To Make polish salad

Step 1Chop 1/4 head of lettuce to desired size and set aside in a salad bowl.

Step 2In a separate bowl mash the yolk of ONE egg , to that add all of the remaining ingredients except for the remaining eggs. Season to taste.

Step 3Chop the remaining eggs and set aside.

Step 4Pour dressing over lettuce and toss.

Step 5Scatter the chopped egg over the salad and serve.
