There are so many Italian recipes that include pasta with peas - this one is gluten-free! (using olive oil spray and no cheese = 0 WW points)

Ingredients

  • 1 tablespoon olive oil (or use a couple spitzes of olive oil spray)
  • 1 medium onion, large dice
  • 8 ounces portabella mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon Italian seasoning (dried Italian herbs)
  • 2 cups frozen peas, thawed
  • 1/4 teaspoon sea salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1 lemon, zest and juice
  • grated Parmesan, to serve (optional)

How To Make peas italiano - piselli con funghi e cipolle

  • Step 1
    Heat oil in a skillet. Add onions, saute until slightly translucent. Add mushrooms. Cook until they release moisture. Add garlic, cook briefly.
  • Step 2
    Stir Italian seasoning and peas into the onion mixture, and heat until warmed.
  • Step 3
    Sprinkle with lemon zest and a couple of squeezes of lemon juice. Add a bit of grated cheese, if desired. Serve.
