With peaches and avocados in abundance this time of year- this makes for a great and ez meal; weather it be lunch with the girls or with the family around the kitchen table.. there is always room for fresh ingredients.

Ingredients

  • DRESSING:
  • 1/4 cup mayonnaise
  • 1 tablespoon honey
  • 1 medium lime, use juice and zest
  • - salt and pepper to taste
  • WRAPS
  • 4 large tortillas or other wraps
  • 2 large ripe peaches, pitted and sliced
  • 1 large ripe avocado, pitted, and sliced
  • 1 cup spring salad mix or baby arugula or baby spinach
  • 1/4 cup chopped nuts or seeds

How To Make peachy avocado wrap

  • Step 1
    Dressing: Mix together all ingredients in a small bowl. Cover and chill at least 30 minutes.
  • Step 2
    Making the wraps: Spread each tortilla equally with the dressing. Divide the remaining ingredients equally among the tortillas and top with the nuts. Roll up and fasten with a toothpick if necessary.Cut in 1/2 and serve.
  • Step 3
    Note this can be made by mashing the avocado and cut up the peaches and add a few cherries or grapes and spread on the dressing and roll up too. I like it this way. And if not vegan- add a bit of crispy bacon.
