parmesan zucchini
I have been making this recipe for a very long time. Something about shredding the zucchini changes the flavor and it even appeals to the pickiest eater. I'm sure the parmesan cheese helps too. : )

Ingredients
- 6 small zucchini, shredded
- 2 tablespoons butter
- 6 - green onions, chopped
- - salt and freshly ground black pepper to taste
- - freshly ground nutmeg
- 1/4-1/2 cup parmesan cheese, grated
How To Make parmesan zucchini

Step 1Using a food processor or hand grater, grate zucchini. Drain on paper towels to absorb excess moisture.

Step 2Place zucchini and green onions in a saucepan with melted butter on high heat until just heated through.

Step 3Remove from heat and add salt/pepper, and nutmeg. Serve immediately and sprinkle with grated parmesan.
