I have been making this recipe for a very long time. Something about shredding the zucchini changes the flavor and it even appeals to the pickiest eater. I'm sure the parmesan cheese helps too. : )

Ingredients

  • 6 small zucchini, shredded
  • 2 tablespoons butter
  • 6 - green onions, chopped
  • - salt and freshly ground black pepper to taste
  • - freshly ground nutmeg
  • 1/4-1/2 cup parmesan cheese, grated

How To Make parmesan zucchini

  • Step 1
    Using a food processor or hand grater, grate zucchini. Drain on paper towels to absorb excess moisture.
  • Step 2
    Place zucchini and green onions in a saucepan with melted butter on high heat until just heated through.
  • Step 3
    Remove from heat and add salt/pepper, and nutmeg. Serve immediately and sprinkle with grated parmesan.
