6 smallzucchini, shredded
6green onions, chopped
·salt and freshly ground black pepper to taste
·freshly ground nutmeg
1/4-1/2 cparmesan cheese, grated
How to Make Parmesan Zucchini
- Using a food processor or hand grater, grate zucchini. Drain on paper towels to absorb excess moisture.
- Place zucchini and green onions in a saucepan with melted butter on high heat until just heated through.
- Remove from heat and add salt/pepper, and nutmeg. Serve immediately and sprinkle with grated parmesan.
