- 2 medium zucchini, sliced into approximately 1/4" slices
- 1 - small amount of olive oil or other cooking oil for brushing
- 3 to 4 tablespoons parmesan cheese
- - salt and pepper to taste
How To Make parmesan roasted zucchini

Step 1Preheat oven to 425. Line a cookie sheet with aluminum foil and spray with cooking spray, set aside.

Step 2Slice zucchini and place slices in the prepared pan. Pour a small amount of oil into measuring cup. Using a pastry brush, lightly brush the zucchini with oil. Unused oil can be returned to the original container.

Step 3Sprinkle with salt and pepper. Sprinkle cheese evenly over slices. Bake for 15 to 20 minutes or until zucchini is tender and lightly browned. Enjoy as a side dish with your favorite entree.
