This roasted zucchini recipe is wonderful for most weight-loss programs. Lightly brushing the oil on only adds a small amount and the Parmesan cheese adds so much flavor without a lot of calories. You can enjoy this recipe without guilt!

Ingredients

  • 2 medium
    zucchini, sliced into approximately 1/4" slices
  • 1
    small amount of olive oil or other cooking oil for brushing
  • 3 to 4 Tbsp
    parmesan cheese
  • ·
    salt and pepper to taste

How to Make Parmesan Roasted Zucchini

Step-by-Step

  1. Preheat oven to 425. Line a cookie sheet with aluminum foil and spray with cooking spray, set aside.
  2. Slice zucchini and place slices in the prepared pan. Pour a small amount of oil into measuring cup. Using a pastry brush, lightly brush the zucchini with oil. Unused oil can be returned to the original container.
  3. Sprinkle with salt and pepper. Sprinkle cheese evenly over slices. Bake for 15 to 20 minutes or until zucchini is tender and lightly browned. Enjoy as a side dish with your favorite entree.
