Parmesan Roasted Zucchini
2 mediumzucchini, sliced into approximately 1/4" slices
1small amount of olive oil or other cooking oil for brushing
3 to 4 Tbspparmesan cheese
·salt and pepper to taste
How to Make Parmesan Roasted Zucchini
- Preheat oven to 425. Line a cookie sheet with aluminum foil and spray with cooking spray, set aside.
- Slice zucchini and place slices in the prepared pan. Pour a small amount of oil into measuring cup. Using a pastry brush, lightly brush the zucchini with oil. Unused oil can be returned to the original container.
- Sprinkle with salt and pepper. Sprinkle cheese evenly over slices. Bake for 15 to 20 minutes or until zucchini is tender and lightly browned. Enjoy as a side dish with your favorite entree.
