You can substitute ground nutmeg for the cinnamon. I personally like the cinnamon. If you are diabetic switch the brown sugar for Splenda Brown Sugar but use only 1/2 as much

Ingredients

  • 2 small acorn squash,halved and seeded
  • 1 tablespoon butter,melted
  • 1 tablespoon brown sugar
  • 1 tablespoon olive oil
  • 2 tablespoons grated parmesan cheese
  • 1/4 teaspoon ground cinnamon

How To Make parmesan-glazed acorn squash

  • Step 1
    Heat oven to 375' Cut each squash in half;clean out. Place cut sides up,in a 13"x 9" baking dish. Add 1/2 cup warm water to dish and cover. Bake 40 minutes or until squash is tender
  • Step 2
    Mix butter,sugar and oil;spoon over squash. Top with cheese and cinnamon;bake,uncovered,5 minutes.
