How to Make parmesan encrusted yellow squash
- slice the squash in 1/8 inch slices and put in a small bowl
- add the olive oil and salt and toss to cover the slices
- combine the cheese and bread crumbs in a small bowl and add the squash and coat the pieces
- place the squash on an oiled cookie sheet and bake at 350 degrees for 25 minutes
- plate and enjoy
