panko-parmesan asparagus/w garlic dipping sauce

I am not a big fan of Asparagus, but this is delicious. My husband loved it. I served it with a hamburger steak.

Ingredients

  • 1/4 cup all purpose flour
  • 1/4 cup refrigerated egg product or 1 egg, slightly beaten
  • 3/4 cup panko bread crumbs
  • 1/4 cup grated parmesan cheese
  • 1/4 teaspoon black pepper
  • 24 stalks spears fresh asparagus, trimmed. use fresh only
  • 1 - recipe garlic dipping sauce.
  • GARLIC DIPPING SAUCE (IN A SMALL BOWL COMBINE ALL INGREDIENTS BELOW)
  • 1/4 cup each of mayonaide and plain fat free yogurt
  • 2 tablespoons snipped fresh parsley
  • 1 tablespoon white wine vinegar
  • 1 teaspoon dijon mustard
  • 1 clove minced garlic

How To Make panko-parmesan asparagus/w garlic dipping sauce

  • Step 1
    Preheat oven to 400 degrees F. Coat a large baking sheet with Pam spray. Place flour in a shallow dish. Place beaten egg in a second dish. in a food processor combine panko, cheese, and pepper. Cover and pulse until fine. Transfer this to a third dish.
  • Step 2
    Roll asparagus spears in flour, dip in egg, then roll in panko mixture to coat. Place 1/2 in. apart on baking sheet. Sprinkle with any remaining panko mixture and lightly coat with Pam.
  • Step 3
    Bake 12- 15 minutes or until asparagus is tender and coating is golden brown. Serve warm with Garlic Dipping Sauce.
