If you hate soggy cauliflower, you'll love this recipe! And I guarantee even the pickiest eater will be happy... Great as a side dish, or a party appetizer. I personally love these plain, but have served them at parties (with great success!) alongside a bowl of marinara. My family likes these with blue cheese or ranch dressing, garlic aioli, ketchup, you name it...

Ingredients For panko crusted cauliflower bites

  • 1/2
    cauliflower head
  • 2 sm
    eggs
  • 1/2 tsp
    sweet paprika
  • 1 1/4 tsp
    mexican oregano, divided use
  • 1/4 tsp
    kosher salt
  • 1/4 tsp
    black pepper
  • 1 c
    panko bread crumbs

How To Make panko crusted cauliflower bites

    I make this recipe in an air fryer at 350 F on a wire tray/basket But if using a conventional oven, preheat to 425 F.

    Cut the cauliflower into small bite-size pieces. You'll need about 1/2 a cauliflower, or two cups. Set aside.

    In a small bowl, whisk the eggs, paprika, salt, pepper, and 3/4 teaspoon of the oregano. (Rub the oregano between your hands to grind it up a little). Whisk until smooth. Set aside.

    In a shallow bowl, combine the panko and the remaining 1/2 teaspoon of oregano (rub the oregano between your hands to grind it up a little). Season to taste with salt and pepper, but remember you already salted the egg wash.

    Dip a piece of cauliflower in the egg wash, coating completely. Dredge it in the panko mixture until completely covered. Place on the wire tray/basket. Repeat with remaining pieces, but don't allow the pieces to touch on the tray.

    Air fry at 350 F for 15-20 minutes until golden brown. If using a conventional oven, place the basket on a baking sheet and bake at 425 F for about 30-35 minutes until golden brown.

    Serve plain or with a dipping sauce of your choice. These are good with ranch or blue cheese dressing, salsa, marinara, or a garlic aioli.
