oversize okra pods are edible

I found this out by accident. I was microwave blanching okra for the freezer and had a few pods that were about 6 inches long....Way too long to munch on as okra that big gets pretty tough. I looked at these pods and thought they were just too nice to throw away and there must be something to salvage. As you know okra pods are full of tasty seeds, so without the tough pod they might be really good to eat. As it turns out, I got about a teaspoon of cooked seeds from each pod. That isn't a lot, but if you like okra as much as I it makes a tasty and unusual veggie on the table

How To Make oversize okra pods are edible

  • Step 1
    sort out all the okra pods you have that stayed on the plant too long and are too tough to eat.
  • Step 2
    Place the oversize pods on a Styrofoam sheet (like meat comes packaged on from the grocery.
  • Step 3
    cook the pods in your microwave until the pod pops open. Time will be determined by the number of pods you are cooking
  • Step 4
    Cut the end off the cooked pods.
  • Step 5
    Gently roll the cooked seeds out of the pod, leaving the leather like hull behind. The seeds are delicious and NOT slimey!
