A delicious way to have beet root.

Ingredients

  • 3 medium beet roots, raw
  • 2 tablespoons olive oil
  • - salt and pepper
  • 1 teaspoon rosemary, dried
  • 3 1/2 ounces greek yogurt
  • - salt, to taste
  • 1 teaspoon horseradish, prepared (or more to taste)
  • - salad herbs, optional

How To Make oven baked beet root

  • Step 1
    Preheat oven to 350°F (convection oven)
  • Step 2
    Peel the beets and slice, about 1/2 inch thick
  • Step 3
    In a bowl, combine sliced beets with salt, pepper, rosemary and oil.
  • Step 4
    Place slices on a baking paper lined baking tray and bake at 350°F for about 30 minutes. Turn the slices half way through the baking time.
  • Step 5
    While baking, combine yoghurt, horseradish, salt to taste and salad herbs
  • Step 6
    Serve the beet root slices hot with the horseradish dip
