This orzo salad is big on flavor and oh so good. We liked the sweetness of the snow peas and fresh spinach. Sun-dried tomatoes give the salad a touch of tartness. Easy to make and perfect for spring, you can enjoy this as a side dish or a main meal.

- 1 cup orzo pasta, uncooked
- 2 - garlic cloves, smashed
- 1 tablespoon olive oil
- 1 cup snow peas
- 1 cup spinach, fresh
- 2 - sun-dried tomatoes, julienned (sliced thin)
- 1/2 cup Parmesan cheese

To keep the Parmesan cheese from melting into clumps, remove the skillet from the heat and then add the cheese.

Step 1Boil the orzo according to the package for about 8 mins. Drain & set aside.

Step 2In a skillet, add the olive oil and garlic (don't brown) on low heat for about a minute. Add the spinach, snow peas, sun-dried tomatoes & Parmesan cheese. Stir together, and cover until the Parmesan melts about 5 mins. Add salt/pepper to taste. Enjoy as a side... or a meal.... YUM.
