Orzo w/ Snow Peas, Spinach & Sun-Dried Tomatoes

This orzo salad is big on flavors and oh so good. I really liked the snow peas. They add a pleasant sweetness. Yummy! The Test Kitchen
1 corzo pasta, uncooked
2garlic cloves, smashed
1 Tbspolive oil
1 csnow peas
1 cspinach, fresh
2sun-dried tomatoes, julienned (sliced thin)
1/2 cParmesan cheese
How to Make Orzo w/ Snow Peas, Spinach & Sun-Dried Tomatoes
- Boil the orzo according to package about 8 mins, drain & set aside.
- In a skillet, add the olive oil and garlic (don't brown) on low heat about a minute. Add the spinach, snow peas, sun-dried tomatoes & Parmesan cheese. Stir together, cover until the Parmesan melts about 5 mins. Add salt/pepper to taste.
- Enjoy as a side... or a meal.... YUM.
