    orzo pasta, uncooked
  • 2
    garlic cloves, smashed
  • 1 Tbsp
    olive oil
  • 1 c
    snow peas
  • 1 c
    spinach, fresh
  • 2
    sun-dried tomatoes, julienned (sliced thin)
  • 1/2 c
    Parmesan cheese

How to Make Orzo w/ Snow Peas, Spinach & Sun-Dried Tomatoes


  1. Boil the orzo according to package about 8 mins, drain & set aside.
  2. In a skillet, add the olive oil and garlic (don't brown) on low heat about a minute. Add the spinach, snow peas, sun-dried tomatoes & Parmesan cheese. Stir together, cover until the Parmesan melts about 5 mins. Add salt/pepper to taste.
  3. Enjoy as a side... or a meal.... YUM.
