Organic NON-GMO Southern Style Creamed Corn

Jeanne Collins

Since my favorite cornbread recipe calls for a cup of creamed corn, and I have no way of knowing if a can of corn contains genetically modified corn (85% of all corn in the US food chain is genetically modified to contain pesticide in its DNA) I use this recipe to make my own creamed corn from certified organic NON-GMO corn.

  • 1In a large bowl, cut the tip off cob. Cut the kernels from cob with a small paring knife. Using the back of the blade, scrape against the cob to press out the milky liquid.
  • 2Whisk together sugar and flour, add salt and pepper to taste. Combine with corn. Add the heavy cream and cold water. Mix.
  • 3In a large skillet over medium heat, heat the bacon grease. Add corn mixture and turn heat down to medium-low, stirring until it becomes creamy (about 30 minutes)
  • 4Add the butter right before serving
