Ingredients

  • 1 pound orecchiette pasta
  • 2 cloves garlic
  • 1 cup tomatoes , seeded & diced
  • 2 cups spinach, fresh
  • 1/2 cup black olives, sliced
  • 1 can garbanzo beans, rinse and drained
  • 1 - lemon zest
  • 1/4 cup olive oil
  • 1/4 cup feta cheese, crumbled

How To Make orecchiette pasta salad

  • Step 1
    Boil pasta al dente about 9 mins, drain, set aside
  • Step 2
    meanwhile in a large pan, saute crushed garlic in olive oil...about a min add tomatoes, spinach, black olives, garbanzo beans
  • Step 3
    mix in the drained pasta,add lemon zest and feta cheese...serve room temperature or chilled
