Made this up and I had never used Red Kuri squash before. It is simply amazing. If you like pumpkin this is for you! I cant keep enough of it around. Hope you enjoy it as much as my husband does!

Ingredients
- 1 - red kuri winter squash
- 1/4 cup butter (do not subsitute)
- to taste - cinnamon
- to taste - salt
- to taste - pepper
- bit - evvo
- 1/4 cup splenda brown sugar
- dash - nutmeg

Step 1Cut red kuri in half,scoop out seeds.

Step 2Rub inside with evvo and sprinkle with S & P.

Step 3Place open side down on foil lined cookie sheet.

Step 4Bake in Pre-heated oven @ 375 for 45-50 minutes. It will soften or collapse.

Step 5Let cool until you can handle it. Then scoop out the golden delicious flesh and mash it like a potatoes.

Step 6Add butter and the rest of the ingredients. Blend well. Taste....adjust to your taste !! Serve warm, taste like tour eating pumpkin pie !!
