omg this cant be squash ! ( red kuri )

Made this up and I had never used Red Kuri squash before. It is simply amazing. If you like pumpkin this is for you! I cant keep enough of it around. Hope you enjoy it as much as my husband does!

Ingredients

  • 1 - red kuri winter squash
  • 1/4 cup butter (do not subsitute)
  • to taste - cinnamon
  • to taste - salt
  • to taste - pepper
  • bit - evvo
  • 1/4 cup splenda brown sugar
  • dash - nutmeg

How To Make omg this cant be squash ! ( red kuri )

  • Step 1
    Cut red kuri in half,scoop out seeds.
  • Step 2
    Rub inside with evvo and sprinkle with S & P.
  • Step 3
    Place open side down on foil lined cookie sheet.
  • Step 4
    Bake in Pre-heated oven @ 375 for 45-50 minutes. It will soften or collapse.
  • Step 5
    Let cool until you can handle it. Then scoop out the golden delicious flesh and mash it like a potatoes.
  • Step 6
    Add butter and the rest of the ingredients. Blend well. Taste....adjust to your taste !! Serve warm, taste like tour eating pumpkin pie !!
