Home alone this weekend,and craving Okra or lady finger,which is messy initially to prepare,but once you learn the trick,it is easy as.Okra is readily available in Dubai and they are cheap as chips.I normally clean and flash freeze before bagging them in portion size zip lock freezer bags.This recipe is simple but very flavorful.

Ingredients

  • 500 g
    okra, fresh chopped
  • 2 medium
    chilies, green sliced vertically
  • 3 Tbsp
    grapeseed oil /canola
  • 1 tsp
    coriander seeds, ground
  • 1 tsp
    cumin seeds, ground
  • 1/2 tsp
    turmeric , ground
  • 1 tsp
    salt
  • 3
    curry leaves
  • 1 tsp
    lemon juice, fresh

How to Make Okra/Lady Finger

Step-by-Step

  1. wash and wipe dry okra/lady finger thoroughly using a tea towel.
  2. chop/slice
  3. heat oil in heavy frying pan with lid.
  4. add curry leaves.
  5. stir in the spices.
  6. lower heat and allow to cook for 10 minutes, stirring continually.
  7. serve okra/lady finger with flat bread and a side of fresh yogurt.
  8. Note
    Okra/lady finger emits a sticky substance when it comes into contact with water — therefore always wash and dry thoroughly before chopping. Avoid adding water to the cooking process,always cover the frying pan for a few minutes when cooking.
