Ingredients For okra and tomatoes

2 tspolive oil

1/2medium onion, chopped

1/2 mdgreen pepper, chopped
-
1/2 mdrib of celery, chopped

114.5 oz can no-salt added diced tomatoes, undrained

10 ozfrozen sliced okra, thawed
-
1/2 tspsugar cinnamon mixture
-
1/4 tspdried thyme, crumbled
-
2/8 tspsalt...divided use
How To Make okra and tomatoes

1Heat oil in large saucepan and cook onion, pepper and celery for about 3 minutes until onion is soft.

2Stir in the tomatoes with liquid,okra, sugar, thyme, and 1/8 tsp. salt. Bring to a boit. Reduce heat and simmer, covered, for 15 minutes, or until the okra is very tender, stirring occ. Remove from heat.

3Stir in the remaining 1/8 tsp. salt. Let stand, covered, for 5 minutes so the flavors blend.
