1Heat oil in large saucepan and cook onion, pepper and celery for about 3 minutes until onion is soft.
2Stir in the tomatoes with liquid,okra, sugar, thyme, and 1/8 tsp. salt. Bring to a boit. Reduce heat and simmer, covered, for 15 minutes, or until the okra is very tender, stirring occ. Remove from heat.
3Stir in the remaining 1/8 tsp. salt. Let stand, covered, for 5 minutes so the flavors blend.
