Ingredients

  • 2 teaspoons olive oil
  • 1/2 - medium onion, chopped
  • 1/2 medium green pepper, chopped
  • 1/2 medium rib of celery, chopped
  • 1 - 14.5 oz can no-salt added diced tomatoes, undrained
  • 10 ounces frozen sliced okra, thawed
  • 1/2 teaspoon sugar cinnamon mixture
  • 1/4 teaspoon dried thyme, crumbled
  • 2/8 teaspoon salt...divided use

How To Make okra and tomatoes

  • Step 1
    Heat oil in large saucepan and cook onion, pepper and celery for about 3 minutes until onion is soft.
  • Step 2
    Stir in the tomatoes with liquid,okra, sugar, thyme, and 1/8 tsp. salt. Bring to a boit. Reduce heat and simmer, covered, for 15 minutes, or until the okra is very tender, stirring occ. Remove from heat.
  • Step 3
    Stir in the remaining 1/8 tsp. salt. Let stand, covered, for 5 minutes so the flavors blend.
