Ingredients

  • 2 tsp
    olive oil
  • 1/2
    medium onion, chopped
  • 1/2 medium
    green pepper, chopped
  • 1/2 medium
    rib of celery, chopped
  • 1
    14.5 oz can no-salt added diced tomatoes, undrained
  • 10 oz
    frozen sliced okra, thawed
  • 1/2 tsp
    sugar cinnamon mixture
  • 1/4 tsp
    dried thyme, crumbled
  • 2/8 tsp
    salt...divided use

How to Make Okra and Tomatoes

Step-by-Step

  1. Heat oil in large saucepan and cook onion, pepper and celery for about 3 minutes until onion is soft.
  2. Stir in the tomatoes with liquid,okra, sugar, thyme, and 1/8 tsp. salt. Bring to a boit. Reduce heat and simmer, covered, for 15 minutes, or until the okra is very tender, stirring occ. Remove from heat.
  3. Stir in the remaining 1/8 tsp. salt. Let stand, covered, for 5 minutes so the flavors blend.
