Had a cucumber, green pepper, onion and what else to make with these ingredients is a salad. I had forgot that I use to make this often when I first got married. Made it and shared it with my neighbor which loved the taste. Cooking for two isn't easy some times. This is a keeper during these hot summer days when you don't really want to heat up the kitchen. Enjoy!

1 large
tomato, cut into pieces
1 medium
cucumber, peeled and sliced
of a large onion, cut into slices
1 large
green pepper, cut into pieces
1/4 c
apple cider vinegar
4 Tbsp
sugar ( use less for more tang ) if desired
1 tsp
celery seed
salt and pepper to taste
top with crumbled feta chees if desired

How to Make My Cool Salad For A Hot Summer Day


  • 1Cut all vegetibals into disired size pieces along with sliced cucumber.
  • 2Place into a large mixing bowl and add vinegar, sugar, celery seed, salt and pepper to taste and mix well to cover all.
  • 3Cover and place in refrigerator to cool.
  • 4Serve as a side dish along with your favorite BBQ meats.
  • 5NOTE: Double the vegetables for a larger group of people.
