Had a cucumber, green pepper, onion and what else to make with these ingredients is a salad. I had forgot that I use to make this often when I first got married. Made it and shared it with my neighbor which loved the taste. Cooking for two isn't easy some times. This is a keeper during these hot summer days when you don't really want to heat up the kitchen. Enjoy!

Ingredients

  • 1 large
    tomato, cut into pieces
  • 1 medium
    cucumber, peeled and sliced
  • 1/4
    of a large onion, cut into slices
  • 1 large
    green pepper, cut into pieces
  • 1/4 c
    apple cider vinegar
  • 4 Tbsp
    sugar ( use less for more tang ) if desired
  • 1 tsp
    celery seed
  • ·
    salt and pepper to taste
  • ·
    top with crumbled feta chees if desired

How to Make My Cool Salad For A Hot Summer Day

Step-by-Step

  1. Cut all vegetibals into disired size pieces along with sliced cucumber.
  2. Place into a large mixing bowl and add vinegar, sugar, celery seed, salt and pepper to taste and mix well to cover all.
  3. Cover and place in refrigerator to cool.
  4. Serve as a side dish along with your favorite BBQ meats.
  5. NOTE: Double the vegetables for a larger group of people.
