MADE A HUGE DINNER NITE B4 N HAD LEFT OVER MASHD VEGGIE SO I REPURPOSED IT FOR NEXT NITES DINNER....CAME OUT DELICIOUS ;) N CLEANN THE KITCHEN FROM FRYN TOOK THE REST OF THE NITE...N THIS IS Y I DO NOT FRY OFTEN!

Ingredients

  • 3 cups my veggie mash, added 2 tblsp fresh chopd parsley
  • 1/2 cup parmesean cheese
  • 2 tablespoons fresh parsley, chopd
  • 1 1/2 cups flour, seasond with 1/4 tsp each bulk pepper, salt, garlic powder and paparika
  • 1 large egg
  • 1 cup vegetable oil, divided

How To Make mock potato pancakes

  • Step 1
    MIX IN EGG, PARSLEY AND PARMESEAN CHEESE INTO LEFT OVER VEGGIE MASH
  • Step 2
    FORM PATTIES N PAT BOTH SIDES IN SEASOND FLOUR
  • Step 3
    HEAT UP HALF OF THE OIL N FRY UNTIL GOLDEN ON BOTH SIDES...ADD MORE OIL N CONTINUE FRYN REMAINN PATTIES. MAKE SURE THEY R DARK ENOUGH SO WEN U FLIP PATTIES THEY WONT FALL APART :)
