Ingredients
- 1 medium thin green zucchini squash
- 1/2 cup flour
- 1 - egg
- 1/4 cup milk
- 1/2 cup panko seasoned breadcrumbs
- 1/2 cup grated parmesan cheese
- 1/4 cup canola oil
- 1 cup tomato sauce
- 1 1/2 cups shredded part skim mozzarella cheese
- 4 ounces package of turkey pepperoni rounds
How To Make mini zucchini pizza rounds

Step 1Step 1 Wash the zucchini and slice into 24 rounds.

Step 2Step 2 In 3 soup size bowls prepare the breading mixes. In bowl #1, add the flour. In bowl #2, beat the egg and the milk together with a fork. In bowl #3, mix the panko breadcrumbs with the Parmesan cheese. Dip the Zucchini rounds first in the flour, then the egg mixture, and finally in the breadcrumb mix.

Step 3Step 3 Add the canola oil in a large fry pan and heat to medium high. Carefully add the zucchini rounds. Turn over one time and cook till golden brown and crispy. Place on a greased cookie sheet.

Step 4Step 4 Top each round with a spoonful of the tomato sauce, and then the Mozzarella cheese. Top this with a pepperoni piece.

Step 5Step 5 Bake about 15 minutes or till hot and bubbly.
