A yummy and delicious quick way to enjoy your fresh zucchini from the garden. Serve as a side dish with your next BBQ or alone for lunch. My grandchildren tried them and went back for more.

Ingredients For mini zucchini pizza rounds

    thin green zucchini squash
  • 1/2 c
    flour
  • 1
    egg
  • 1/4 c
    milk
  • 1/2 c
    panko seasoned breadcrumbs
  • 1/2 c
    grated parmesan cheese
  • 1/4 c
    canola oil
  • 1 c
    tomato sauce
  • 1 1/2 c
    shredded part skim mozzarella cheese
  • 4 oz
    package of turkey pepperoni rounds

How To Make mini zucchini pizza rounds

    Step 1 Wash the zucchini and slice into 24 rounds.

    Step 2 In 3 soup size bowls prepare the breading mixes. In bowl #1, add the flour. In bowl #2, beat the egg and the milk together with a fork. In bowl #3, mix the panko breadcrumbs with the Parmesan cheese. Dip the Zucchini rounds first in the flour, then the egg mixture, and finally in the breadcrumb mix.

    Step 3 Add the canola oil in a large fry pan and heat to medium high. Carefully add the zucchini rounds. Turn over one time and cook till golden brown and crispy. Place on a greased cookie sheet.

    Step 4 Top each round with a spoonful of the tomato sauce, and then the Mozzarella cheese. Top this with a pepperoni piece.

    Step 5 Bake about 15 minutes or till hot and bubbly.
