  • 2 tablespoons cooking oil
  • 1 - red pepper, chopped
  • 2 large zucchini, sliced
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 10 ounces pkg. frozen corn
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

How To Make mexican zucchini

  • Step 1
    Add oil to frying pan; saute all remaining ingredients, stir and cook about 5 minutes, until vegetables are tender crisp. Makes 4 servings.
