This has been handed down to me so Im not sure where it originated. If your family or friends have "themed dinner nights" then this is a perfect dish for "Mexican night". My bowl is always empty at the end of the night. This is great with tortilla chips, on tacos or in a burrito.

  • 15 oz
    black beans, canned rinsed and drained
  • 15 oz
    garbanzo beans drained
  • 3 c
    corn kernels, frozen
  • 1/2
    onion diced
  • 2-3
    jalapeno peppers seeded and minced
  • 1/2 c
    olive oil
  • 3 Tbsp
    fresh lime juice
  • 1/2 tsp
    honey (optional)
  • 1 tsp
    ground black pepper (or to taste)
  • ·
    salt to taste

How to Make Mexican Salad


  1. Combine all ingredients in a large bowl. Mix well and allow to sit 1 hour before serving.
