This has been handed down to me so Im not sure where it originated. If your family or friends have "themed dinner nights" then this is a perfect dish for "Mexican night". My bowl is always empty at the end of the night. This is great with tortilla chips, on tacos or in a burrito.

Ingredients

  • 15 ounces black beans, canned rinsed and drained
  • 15 ounces garbanzo beans drained
  • 3 cups corn kernels, frozen
  • 1/2 - onion diced
  • 2-3 - jalapeno peppers seeded and minced
  • 1/2 cup olive oil
  • 3 tablespoons fresh lime juice
  • 1/2 teaspoon honey (optional)
  • 1 teaspoon ground black pepper (or to taste)
  • - salt to taste

How To Make mexican salad

  • Step 1
    Combine all ingredients in a large bowl. Mix well and allow to sit 1 hour before serving.
