Mexican Corn On The Cob
4 largeears of sweet corn
4 slicelime wedges
1/2 ccotija cheese, crumbled (like feta only better)
·cayenne, if desired for garnish
How to Make Mexican Corn On The Cob
- Prepare corn by grilling, steaming in microwave or in boiling water.
Remove corn to serving plate- while it is warm , spread 1/2 Tablespoon of butter and 1 Tablespoon of mayonnaise all over the corn.
Take 1/8 cup of the cheese and sprinkle or crumble it on the corn, then sprinkle on some heat with the cayenne pepper and squeeze on some lime juice. Enjoy.
