    ears of sweet corn
  • 2 Tbsp
  • 4 Tbsp
  • 4 slice
    lime wedges
  • 1/2 c
    cotija cheese, crumbled (like feta only better)
  • ·
    cayenne, if desired for garnish

How to Make Mexican Corn On The Cob


  1. Prepare corn by grilling, steaming in microwave or in boiling water.
    Remove corn to serving plate- while it is warm , spread 1/2 Tablespoon of butter and 1 Tablespoon of mayonnaise all over the corn.
    Take 1/8 cup of the cheese and sprinkle or crumble it on the corn, then sprinkle on some heat with the cayenne pepper and squeeze on some lime juice. Enjoy.
