This is hearty enough to make as a vegetarian meal with a nice salad and a French loaf of bread. I hope you all try it and let me know what you think.

- drained plain artichoke, chopped
- bag thawed frozen spinach, drained
- 3 clove
- crushed garlic
- 1/2 c
- parmesan cheese
- 1 large
- onion, chopped
How to Make Mediterrean eggplant
- 1Add onion to frypan and brown lightly until wilted. Add all but the eggplant and mix well. Put 2 tbsp of filling into each round of eggplant and fold over. Cover pan and bake at 350 for 1/2 hour.
