You can use a can of sweet yellow corn in the place of the white shoe peg corn. I do quite often because I like the flavor and the bright yellow color that it adds. This dish makes a lot and can be halved. It is great for family gatherings and church socials. It is good side dish for large holiday dinners. It adds a sweet acid flavor to the meal.

Ingredients
- MARINATE
- 3/4 cup apple cider vinegar
- 1/2 cup weson oil
- 1 cup sugar
- 1 teaspoon water
- 1 teaspoon salt
- 1 teaspoon pepper
- VEGETABLES
- 1 large bellpepper
- 1 large onion
- 1 cup celery
- 1 cup pimento
- 1 can french green beans
- 1 can english peas
- 1 can shoe peg corn (white corn)
How To Make marinated vegetables

Step 1Bring to boil Marinate ingredients and let cool.

Step 2While marinate is cooling, chop bell pepper, onion, celery and pimento.

Step 3Open can vegetables and drain, add to chopped vegetables.

Step 4Pour marinate over all vegetables and place in refrigerator and let set over night or 8 hours. Serve as a side dish or salad with a slotted spoon.
