You can use a can of sweet yellow corn in the place of the white shoe peg corn. I do quite often because I like the flavor and the bright yellow color that it adds.

This dish makes a lot and can be halved. It is great for family gatherings and church socials. It is good side dish for large holiday dinners. It adds a sweet acid flavor to the meal.

3/4 c
apple cider vinegar
1/2 c
weson oil
1 c
sugar
1 tsp
water
1 tsp
salt
1 tsp
pepper

VEGETABLES

1 large
bellpepper
1 large
onion
1 c
celery
1 c
pimento
1 can(s)
french green beans
1 can(s)
english peas
1 can(s)
shoe peg corn (white corn)

How to Make Marinated Vegetables

Step-by-Step

  • 1Bring to boil Marinate ingredients and let cool.
  • 2While marinate is cooling, chop bell pepper, onion, celery and pimento.
  • 3Open can vegetables and drain, add to chopped vegetables.
  • 4Pour marinate over all vegetables and place in refrigerator and let set over night or 8 hours. Serve as a side dish or salad with a slotted spoon.
