You can use a can of sweet yellow corn in the place of the white shoe peg corn. I do quite often because I like the flavor and the bright yellow color that it adds. This dish makes a lot and can be halved. It is great for family gatherings and church socials. It is good side dish for large holiday dinners. It adds a sweet acid flavor to the meal.

Ingredients

  • MARINATE
  • 3/4 cup apple cider vinegar
  • 1/2 cup weson oil
  • 1 cup sugar
  • 1 teaspoon water
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • VEGETABLES
  • 1 large bellpepper
  • 1 large onion
  • 1 cup celery
  • 1 cup pimento
  • 1 can french green beans
  • 1 can english peas
  • 1 can shoe peg corn (white corn)

How To Make marinated vegetables

  • Step 1
    Bring to boil Marinate ingredients and let cool.
  • Step 2
    While marinate is cooling, chop bell pepper, onion, celery and pimento.
  • Step 3
    Open can vegetables and drain, add to chopped vegetables.
  • Step 4
    Pour marinate over all vegetables and place in refrigerator and let set over night or 8 hours. Serve as a side dish or salad with a slotted spoon.
