Ingredients

  • 3/4 c
    vegetable oil
  • 1/2 c
    heinze wine vinegar
  • 1 1/2 tsp
    salt
  • 1 tsp
    sugar
  • 1/2 tsp
    basil, dried
  • 1/4 tsp
    thyme, dried
  • 6
    whole peppercorns
  • 1
    clove garlic, split
  • 1
    bay leaf, dried
  • 1 1/2 lb
    small fresh mushrooms

How to Make Marinated Mushrooms

Step-by-Step

  1. Add all ingredients except the mushrooms to a medium size pot. Heat to boiling, cover, simmer 10 minutes.
  2. Add clean fresh mushrooms, simmer, uncovered 3 minutes.
  3. Transfer mushrooms and liquid to a bowl, cover and chill for 1 hour or overnight. You can drain and serve or I like to let my mushrooms soak in the liquid.
  4. Makes about 3 1/2 cups.
