Marinated Mushrooms

Ingredients

3/4 cvegetable oil

1/2 cheinze wine vinegar

1 1/2 tspsalt

1 tspsugar

1/2 tspbasil, dried

1/4 tspthyme, dried
-
6whole peppercorns
-
1clove garlic, split
-
1bay leaf, dried
-
1 1/2 lbsmall fresh mushrooms
How to Make Marinated Mushrooms
- Add all ingredients except the mushrooms to a medium size pot. Heat to boiling, cover, simmer 10 minutes.
- Add clean fresh mushrooms, simmer, uncovered 3 minutes.
- Transfer mushrooms and liquid to a bowl, cover and chill for 1 hour or overnight. You can drain and serve or I like to let my mushrooms soak in the liquid.
- Makes about 3 1/2 cups.
