Wonderful as a side dish, or appetiser. Best if it sets 24 hours or longer.

Ingredients

  • 3/4 cup vegetable oil
  • 1/2 cup heinze wine vinegar
  • 1 1/2 teaspoons salt
  • 1 teaspoon sugar
  • 1/2 teaspoon basil, dried
  • 1/4 teaspoon thyme, dried
  • 6 - whole peppercorns
  • 1 - clove garlic, split
  • 1 - bay leaf, dried
  • 1 1/2 pounds small fresh mushrooms

How To Make marinated mushrooms

  • Step 1
    Add all ingredients except the mushrooms to a medium size pot. Heat to boiling, cover, simmer 10 minutes.
  • Step 2
    Add clean fresh mushrooms, simmer, uncovered 3 minutes.
  • Step 3
    Transfer mushrooms and liquid to a bowl, cover and chill for 1 hour or overnight. You can drain and serve or I like to let my mushrooms soak in the liquid.
  • Step 4
    Makes about 3 1/2 cups.
