I use to make this & put on the salad bar at a restaurant I worked at.
It can be eaten alone or on salads, etc.

Ingredients

  • ·
    fresh tomatoes
  • ·
    cucumbers
  • ·
    any type italian dressing (vinegar & oil type)
  • ·
    fresh or dried basil
  • ·
    fresh minced garlic clove
  • ·
    few red pepper flakes if you don't use zesty italian dressing (optional)

How to Make MARINATED FRESH TOMATOES & CUCUMBERS

Step-by-Step

  1. Cut fresh toamtoes in wedges, removing core as you cut.
  2. Peel 3 strips from cucumbers lengthwise. Slice cucumber.
  3. Place tomatoes & cucumber in bowl that has a tight fitting lid.
  4. Sprinkle on the basil & minced garlic & pepper flakes, if using.
  5. Pour on the Italian dressing. Toss to coat. Store in fridge. Allow to set overnight before eating.
