marinated fresh tomatoes & cucumbers
I use to make this & put on the salad bar at a restaurant I worked at. It can be eaten alone or on salads, etc.

Ingredients
- - fresh tomatoes
- - cucumbers
- - any type italian dressing (vinegar & oil type)
- - fresh or dried basil
- - fresh minced garlic clove
- - few red pepper flakes if you don't use zesty italian dressing (optional)
How To Make marinated fresh tomatoes & cucumbers

Step 1Cut fresh toamtoes in wedges, removing core as you cut.

Step 2Peel 3 strips from cucumbers lengthwise. Slice cucumber.

Step 3Place tomatoes & cucumber in bowl that has a tight fitting lid.

Step 4Sprinkle on the basil & minced garlic & pepper flakes, if using.

Step 5Pour on the Italian dressing. Toss to coat. Store in fridge. Allow to set overnight before eating.
