marinated cucumber and onion slices

This is something new I had to come up with as typically I use a light italian dressing for this. I made some Sunday and my boyfriend just looved it. Thought I'd share. Probably many versions out there, I remember my mother slicing these veggies and just pouring brown vinegar on it IIIccckkk LOL well I was a kid yanno ?

Ingredients

  • 2 medium cucumbers, peeled and sliced
  • 1 large vidalia onion, sliced in rings
  • DRESSING
  • 1/2 jar drained well, pimentos
  • 1/2 cup red wine vinegar
  • 1/4 cup sugar, or favorite sweetner
  • 1 teaspoon minced prepared garlic
  • 3 tablespoons vegetable oil
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon table blend mrs. dash
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes *optional* will add some heat

How To Make marinated cucumber and onion slices

  • Step 1
    place sliced vegetables in a bowl that has a lid, for storage in refrigerator
  • Step 2
    Combine dressing ingredients and wisk, until sugar dissolves
  • Step 3
    pour over cucumber and onion slices.
  • Step 4
    cover and refrigerate at least 2 hours before serving, shaking and tossing "Closed " bowl or stir Serve cold
