I love balsalmic vinegar in anything which makes this simple yet fresh salad a wonderful acompaniment to chicken, pork or steak hot off the grill anyday.

Ingredients

1/2
head iceburg lettuce, torn
10
red grape tomatoes
10
yellow sunburst grape tomatoes
1/4 small
red onion, thinly sliced

MARINADE

1/4 c
balsalmic vinegar
1/4 c
extra virgin olive oil
1/4 tsp
each, salt and pepper
1 tsp
sugar
1 tsp
dried thyme leaves
1 clove
garlic, minced

How to Make Marinaded Tomatoes & Iceburg Lettuce

Step-by-Step

  • 1Halve the tomatoes & thinly slice all of the red onion.

    * Tear the lettuce just before serving to avoid wilting.
  • 2Combine all ingredients for the marinade and ppour into plastic baggie add onion & tomatoes and let marinade for an hour or two.
  • 3Pour marinade over a large bed of iceberg lettuce & serve family style.

    *I have to give credit since I have seen something similar to this recipe from the Pioneer Woman blog.
    Even so, it is very good so had to share.
