I love balsalmic vinegar in anything which makes this simple yet fresh salad a wonderful acompaniment to chicken, pork or steak hot off the grill anyday.

  • 1/2
    head iceburg lettuce, torn
  • 10
    red grape tomatoes
  • 10
    yellow sunburst grape tomatoes
  • 1/4 small
    red onion, thinly sliced

  • 1/4 c
    balsalmic vinegar
  • 1/4 c
    extra virgin olive oil
  • 1/4 tsp
    each, salt and pepper
  • 1 tsp
  • 1 tsp
    dried thyme leaves
  • 1 clove
    garlic, minced

How to Make Marinaded Tomatoes & Iceburg Lettuce


  1. Halve the tomatoes & thinly slice all of the red onion.

    * Tear the lettuce just before serving to avoid wilting.
  2. Combine all ingredients for the marinade and ppour into plastic baggie add onion & tomatoes and let marinade for an hour or two.
  3. Pour marinade over a large bed of iceberg lettuce & serve family style.

    *I have to give credit since I have seen something similar to this recipe from the Pioneer Woman blog.
    Even so, it is very good so had to share.
