I love balsalmic vinegar in anything which makes this simple yet fresh salad a wonderful acompaniment to chicken, pork or steak hot off the grill anyday. Tangy & Refreshing!

Ingredients

  • 1/2 - head iceburg lettuce, torn
  • 10 - red grape tomatoes
  • 10 - yellow sunburst grape tomatoes
  • 1/4 small red onion, thinly sliced
  • MARINADE
  • 1/4 cup balsalmic vinegar
  • 1/4 cup extra virgin olive oil
  • 1/4 teaspoon each, salt and pepper
  • 1 teaspoon sugar
  • 1 teaspoon dried thyme leaves
  • 1 clove garlic, minced

How To Make marinaded tomatoes & iceburg lettuce

  • Step 1
    Halve the tomatoes & thinly slice all of the red onion. * Tear the lettuce just before serving to avoid wilting.
  • Step 2
    Combine all ingredients for the marinade and ppour into plastic baggie add onion & tomatoes and let marinade for an hour or two.
  • Step 3
    Pour marinade over a large bed of iceberg lettuce & serve family style. *I have to give credit since I have seen something similar to this recipe from the Pioneer Woman blog. Even so, it is very good so had to share.
