mama's fried corn
Just a fun twist to your everyday frozen corn. I serve up a dish of vegetables with every dinner. Living in Ohio, we don't have "fresh" vegetables available all year round. We have a garden, and grow a lot of our vegetables in the summer. I then freeze or can as much as I can to get us through to next season. What I don't grow, I buy from our local farmers. Through the winter, plain vegetables from the freezer can get a little monotonous, so I come up with some twists to our favorites! I used roasted garlic & onions, but feel free to add your favs! Enjoy!

Ingredients
- 16 ounces corn kernels, fresh (or frozen)
- 2 cloves garlic, roasted
- 1 large onions, vidalia, diced
- 1 tablespoon italian seasoning
- 2 tablespoons butter
How To Make mama's fried corn

Step 1Steam corn until cooked. Corn will be hot, but firm, not soft.

Step 2In medium skillet, add butter and melt over medium heat. Add diced onions, steamed corn, and roasted garlic, & Italian seasoning. Cook until onions are transparent, and corn is just lightly brown.

Step 3Serve with your favorite dinner. Even goes well as a side dish to a pot luck!
